Sicily is a table of contrasts: sun-warmed tomatoes, generous vegetables and a sweet finish worth lingering over. Folded casareccia catches the aubergine sauce, while pistachio cream brings a little island indulgence to the end of the meal.

Recipe: Casareccia al sugo di melanzane

1. For 2–3 people, cook 250–300g casareccia in salted water according to the packet.
2. Warm the aubergine sauce gently in a wide pan.
3. Toss in the drained pasta, loosening with a little reserved cooking water. Add fresh basil if available.
4. Serve the sweet pistachio cream separately, spread on biscuits or spooned over yoghurt. It is a dessert spread, not a savoury pasta pesto.

Extra ingredients to have at home (not included): Salt, optional fresh basil, and biscuits or yoghurt for dessert.

Dietary & allergen notes

Wheat/gluten: present in the pasta. Pistachio/tree nuts: present in the dessert spread. Check the spread for milk and soy and all products for egg and may-contain warnings. The whole box is not confirmed vegan; the pasta course may suit a plant-based diet if the sauce label confirms it.
